Raspberry Cream Cheese Brownies

- 1⅓ cup Flour
- 1 teaspoon Baking powder
- ¾ teaspoon Salt
- 2 stick Butter
- 8 ounce Chocolate (unsweetened)
- 1 cup Raspberry jam
- 2½ cup Sugar
- 5 large Egg
- 1 tablespoon Vanilla extract
- 1 pound Cream cheese
- ⅓ cup Sugar
- 1 large Egg yolk
- 1½ teaspoon Vanilla extract
Instructions
- Combine flour, baking powder and salt in bowl.
- Microwave butter and chocolate in large bowl until smooth. Whisk into this mixture 1/2 cup of jam and let cool slightly.
- Microwave remaining 1/2 cup jam until warm.
- Pour half of batter into pan. Dollop filling over batter and then smooth into even layer. Pour warm jam over filling and with a toothpick, swirl around top of filling. Add remaining batter evenly on top of this.
- Bake brownies about 50-60 minutes. Test with toothpick and when done, cool for a couple of hours.
- Cut into 1" squares. Makes about 3 dozen.
Tips
Make sure all dairy ingredients are well-chilled for best results. Use fresh, ripe fruit for the best flavor. Always preheat your oven and check for doneness a few minutes before the suggested baking time.
