Raspberry Cream Cheese Brownies

Ingredients

  • 1⅓ cup Flour
  • 1 teaspoon Baking powder
  • ¾ teaspoon Salt
  • 2 stick Butter
  • 8 ounce Chocolate (unsweetened)
  • 1 cup Raspberry jam
  • cup Sugar
  • 5 large Egg
  • 1 tablespoon Vanilla extract
  • 1 pound Cream cheese
  • cup Sugar
  • 1 large Egg yolk
  • teaspoon Vanilla extract

Instructions

  1. Combine flour, baking powder and salt in bowl.
  2. Microwave butter and chocolate in large bowl until smooth. Whisk into this mixture 1/2 cup of jam and let cool slightly.
  3. Microwave remaining 1/2 cup jam until warm.
  4. Pour half of batter into pan. Dollop filling over batter and then smooth into even layer. Pour warm jam over filling and with a toothpick, swirl around top of filling. Add remaining batter evenly on top of this.
  5. Bake brownies about 50-60 minutes. Test with toothpick and when done, cool for a couple of hours.
  6. Cut into 1" squares. Makes about 3 dozen.

Tips

Make sure all dairy ingredients are well-chilled for best results. Use fresh, ripe fruit for the best flavor. Always preheat your oven and check for doneness a few minutes before the suggested baking time.
