Red Pepper Potato Gratin

Ingredients

Scale: 1x
  • ¼ cup Heavy cream
  • ½ cup Milk
  • ¼ teaspoon Red pepper (crushed)
  • ½ teaspoon Black pepper
  • 12 ounce jar Roasted red peppers with liquid
  • 4 ounce Cheddar cheese (sharp)
  • 1 small package Potato chips

Instructions

  1. In saucepan, combine cream, milk, shallots, red pepper, black pepper and 2 Tbs liquid from roasted peppers. Bring to simmer and cook for 2-3 minutes. Add 1/2 the cheese and cook until melted. Remove from heat.
  2. In a 6-cup baking dish, alternate potatoes and roasted red peppers until you have several layers. You may have to cut some red peppers so they lay flat. Make sure top layer has red peppers.
  3. Pour cream mixture over top and bake for 15 minutes.
  4. Spread potato chips and remaining cheese on top and bake an additional 5 minutes or until cheese is melted.

Tips

Make sure all dairy ingredients are well-chilled for best results. Always preheat your oven and check for doneness a few minutes before the suggested baking time.
