Rustic Dutch-Oven Bread

- 6 cup flour
- ½ cup oats
- 2 tablespoon flax meal
- ½ teaspoon instant yeast
- 2½ teaspoon salt
- 1 tablespoon sugar
Instructions
- Add 3 1/2 cups warm water. You may need a bit more. Look for a shaggy and sticky mixture.
- Cover and let rest for the next 18 hours.
- Pre heat oven to 500. Place pot and cover into oven to heat.
- While the oven is heating, flour a surface and place dough on and turn it over onto itself a couple of times. Use additional flour as needed. Cover and let sit until oven has reached temp.
- Once heat is up to 500, take out dutch-oven and sprinkle some cornmeal into the bottom.
- Place dough into oven and put cover on.
- Bake for 35 minutes. Then remove cover and bake an additional 10 minutes.
- Remove bread from dutch-oven and cool on rack.
Tips
Always preheat your oven and check for doneness a few minutes before the suggested baking time.
