Rustic Dutch-Oven Bread

Ingredients

Scale: 1x
  • 6 cup flour
  • ½ cup oats
  • 2 tablespoon flax meal
  • ½ teaspoon instant yeast
  • teaspoon salt
  • 1 tablespoon sugar

Instructions

  1. Add 3 1/2 cups warm water. You may need a bit more. Look for a shaggy and sticky mixture.
  2. Cover and let rest for the next 18 hours.
  3. Pre heat oven to 500. Place pot and cover into oven to heat.
  4. While the oven is heating, flour a surface and place dough on and turn it over onto itself a couple of times. Use additional flour as needed. Cover and let sit until oven has reached temp.
  5. Once heat is up to 500, take out dutch-oven and sprinkle some cornmeal into the bottom.
  6. Place dough into oven and put cover on.
  7. Bake for 35 minutes. Then remove cover and bake an additional 10 minutes.
  8. Remove bread from dutch-oven and cool on rack.

Tips

Always preheat your oven and check for doneness a few minutes before the suggested baking time.
