Santa Maria Tri-Tip

Ingredients

Scale: 1x
  • 2 teaspoon Garlic powder
  • 1 teaspoon Kosher salt
  • 1 teaspoon Black pepper (coarsely ground)
  • ½ teaspoon Celery seed
  • ¼ teaspoon Cayenne pepper

Instructions

  1. This makes enough to cover a 2 lb. roast.
  2. The night before cooking, apply a thin coat of olive oil on the roast.
  3. Cover with rub and work it into the meat.
  4. Cover tightly with plastic wrap and refrigerate overnight.
  5. Allow beef to come to room temp before grilling.
  6. Sear over direct high heat for 5 minutes per side.
  7. Finish cooking over Indirect medium heat.
