Smoky Cider Stew

Ingredients

Scale: 1x
  • 2 pound Stew beef
  • 2 tablespoon Olive oil
  • 1 large Onion (diced)
  • 2 clove Garlic (minced)
  • 4 sprig Thyme (fresh)
  • 1 teaspoon Paprika (smoked)
  • ¼ teaspoon Ginger
  • ½ cup Apple cider
  • 2 large Carrot (sliced into coins)
  • 3 small Potato (cubed)
  • 14½ ounce Diced tomatoes with juice
  • 14 ounce Beef broth
  • ¼ cup Water
  • tablespoon Cornstarch

Instructions

  1. Add beef and brown. Discard thyme sprigs.
  2. Add apple cider and deglaze pan. Add tomatoes and beef broth and simmer until the meat is tender(couple hours).
  3. Add carrots and taters and simmer another 20-30 minutes.
  4. Mix cornstarch and water. Add, while whisking, to stew until desired thickness.
  5. Flavor with salt and pepper.

Tips

Use fresh, ripe fruit for the best flavor.
