Smoky Cider Stew

Ingredients

- 2 pound Stew beef
- 2 tablespoon Olive oil
- 1 large Onion (diced)
- 2 clove Garlic (minced)
- 4 sprig Thyme (fresh)
- 1 teaspoon Paprika (smoked)
- ¼ teaspoon Ginger
- ½ cup Apple cider
- 2 large Carrot (sliced into coins)
- 3 small Potato (cubed)
- 14½ ounce Diced tomatoes with juice
- 14 ounce Beef broth
- ¼ cup Water
- 1½ tablespoon Cornstarch
Instructions
- Add beef and brown. Discard thyme sprigs.
- Add apple cider and deglaze pan. Add tomatoes and beef broth and simmer until the meat is tender(couple hours).
- Add carrots and taters and simmer another 20-30 minutes.
- Mix cornstarch and water. Add, while whisking, to stew until desired thickness.
- Flavor with salt and pepper.
Tips
Use fresh, ripe fruit for the best flavor.
