Spritz Cookies

Ingredients

  • 1 large Egg yolk
  • 1 tablespoon heavy whipping cream
  • 1 teaspoon Vanilla
  • 2 stick Butter (softened)
  • cup Sugar
  • ¼ teaspoon Salt
  • 2 cup Flour

Instructions

  1. Preheat the oven to 375º. Lightly butter baking sheets.
  2. In stand mixer, cream butter for about 2 minutes. Mix together sugar and salt and add to butter. Mix for 3-4 minutes until fluffy.
  3. Whisk together egg yolk, cream and vanilla and add to butter mixture. Blend for 30 seconds.
  4. Scrape down bowl and on low speed add flour gradually. Scrape down bowl one last time and hand mix.
  5. Place dough in cookie press and press onto cool baking sheet about 1" apart. These will not spread out but they will puff up a bit.
  6. Bake for 10-11 minutes, one sheet at a time.
  7. When done, lift cookies immediately but do not remove from sheet.

Tips

Make sure all dairy ingredients are well-chilled for best results. Always preheat your oven and check for doneness a few minutes before the suggested baking time.
