Spritz Cookies

- 1 large Egg yolk
- 1 tablespoon heavy whipping cream
- 1 teaspoon Vanilla
- 2 stick Butter (softened)
- ⅔ cup Sugar
- ¼ teaspoon Salt
- 2 cup Flour
Instructions
- Preheat the oven to 375º. Lightly butter baking sheets.
- In stand mixer, cream butter for about 2 minutes. Mix together sugar and salt and add to butter. Mix for 3-4 minutes until fluffy.
- Whisk together egg yolk, cream and vanilla and add to butter mixture. Blend for 30 seconds.
- Scrape down bowl and on low speed add flour gradually. Scrape down bowl one last time and hand mix.
- Place dough in cookie press and press onto cool baking sheet about 1" apart. These will not spread out but they will puff up a bit.
- Bake for 10-11 minutes, one sheet at a time.
- When done, lift cookies immediately but do not remove from sheet.
Tips
Make sure all dairy ingredients are well-chilled for best results. Always preheat your oven and check for doneness a few minutes before the suggested baking time.
