Summer Sausage

Ingredients

Scale: 1x
  • pound Pork butt
  • pound Beef chuck
  • 1 tablespoon Kosher salt
  • tablespoon Black pepper
  • 4 teaspoon Tender Quick
  • 3 teaspoon Garlic powder
  • 1 teaspoon Sugar
  • ½ teaspoon MSG
  • ¼ teaspoon Cayenne pepper
  • 5 ounce Water (cold)

Instructions

  1. This is made with a mixture of beef and pork.
  2. Combine all the spices and the water.
  3. Mix this thoroughly into the meats. Cool for 4-5 hours.
  4. Shape this into 3 logs.
