Taquito Casserole

Ingredients

  • pound Tomato (fresh, chopped)
  • 1 small Onion (chopped)
  • 2 cup Smoked meat (beef (chicken or pork))
  • ¼ cup Cilantro (chopped)
  • 2 cup Cheese (Monteray Jack)

Instructions

  1. Pre-heat oven to 450º
  2. Puree tomatoes, garlic, onion and jalapeno peppers. Simmer the puree in a large skillet for about 10 minutes.
  3. If you do not have any smoked meat, you can add about 1 teaspoon of liquid smoke to the puree.
  4. Add meat and cilantro. Continue to simmer this mixture while you prepare a baking dish. This mixture will be quite "liquidy", but the chips will absorb all that liquid.
  5. Grease a 6" x 10" baking dish. Line the bottom with the tortilla chips. Add 1/2 of the meat mixture and top this with 1/2 of the cheese. Place another layer of tortilla chips on top of this and add remaining meat mixture and cheese.
  6. Bake for about 15 minutes and serve with sour cream.

Tips

Make sure all dairy ingredients are well-chilled for best results. Always preheat your oven and check for doneness a few minutes before the suggested baking time.
