Ingredients

  • 5 pound Pork
  • 3 tablespoon Kosher salt
  • 2 teaspoon Tender Quick
  • 2 tablespoon Cayenne pepper
  • 2 tablespoon Paprika
  • 2 tablespoon Black pepper (fresh ground)
  • 2 tablespoon Garlic powder
  • 1 tablespoon Onion powder
  • 1 tablespoon White pepper
  • ½ teaspoon Cinnamon

Instructions

  1. For the pork, you can use pork butt or pork loin. Cut the pork into strips of meat that measure 1" X 4".
  2. You will need to use the TenderQuick for curing purposes. Any time you are drying meat, a cure is needed to maintain safety.
  3. Wrap in plastic wrap or place in large container and store in refrigerator for 3-5 days.
  4. Place the meat on your smoker and cook at a temps between 160-180º for 5 hours. Use pecan wood if available OR any good hardwood except mesquite. Don't let the smoker get above 200º or you will be cooking it and not drying it.
