Ingredients

  • 1 pound Pork butt
  • ¼ bottle Beer
  • 1 teaspoon Black pepper (coarsely ground)
  • 1 teaspoon Red pepper (crushed)
  • 1 teaspoon Cayenne pepper
  • 1 teaspoon Paprika
  • teaspoon Kosher salt
  • 1 teaspoon Dry mustard
  • 1 tablespoon Garlic (minced)
  • ½ teaspoon Garlic powder
  • ½ teaspoon MSG
  • ¼ teaspoon Tender Quick
  • ¼ teaspoon Bay leaf (ground)
  • ¼ teaspoon Coriander
  • ¼ teaspoon Thyme (dried)

Instructions

  1. Mix all spices with beer.
  2. Grind pork for sausage.
  3. Mix beer/spices thoroughly into the meat.
  4. Form into sausage links and grill or smoke.
  5. Place in bun and slather heavily with mustard.
