Thymely Chicken

A hearty Dutch oven chicken stew with fresh thyme, vegetables, and beer
Ingredients

- 6 boneless, skinless chicken breasts
- 1/2 stick butter
- 1/4 cup fresh thyme, chopped
- 2 teaspoons salt
- 1 teaspoon pepper
- 1 cup water
- 1 cup beer
- 4 red potatoes
- 1 red onion, chopped
- 6 carrots
Instructions
- In a 6-quart Dutch oven, melt the butter over medium heat
- Season chicken with salt, pepper, and half of the chopped thyme
- Brown the chicken in the butter on both sides
- Add water and beer to the Dutch oven
- Quarter the potatoes and cut the carrots into 3-inch pieces
- Add the potatoes, carrots, chopped onion, and remaining thyme to the pot
- Cover with the lid
- If cooking with coals, place 15 coals on top and 9 underneath the Dutch oven
- If cooking in an oven, bake at 350°F
- Cook for about 1 hour, until chicken is tender and vegetables are cooked through
Tips
A lighter alternative to beef stew, this chicken dish pairs well with crusty bread to soak up the flavorful broth. Any type of beer works, but a lager or ale will provide the best flavor.
