Tomato Cheddar Soup

Ingredients

- 10 medium Tomato
- 2 medium Onion
- 1 cup Chicken stock
- 1 cup Heavy cream
- 2 teaspoon Basil (dried)
- 8 ounce Cheddar cheese (mild, shredded)
Instructions
- Combine tomatoes, onions and celery in food processor and coarse chop.
- Pour into large stock pot and add chicken stock. Bring to boil.
- Simmer, uncovered, for 20 minutes.
- Add cream and seasonings and cook for 5 minutes.
- Add cheddar cheese and cook until melted.
- Serves 6.
Tips
Make sure all dairy ingredients are well-chilled for best results.
