Tomato Cheddar Soup

Serves 8

Ingredients

Scale: 1x
  • 10 medium Tomato
  • 2 medium Onion
  • 1 cup Chicken stock
  • 1 cup Heavy cream
  • 2 teaspoon Basil (dried)
  • 8 ounce Cheddar cheese (mild, shredded)

Instructions

  1. Combine tomatoes, onions and celery in food processor and coarse chop.
  2. Pour into large stock pot and add chicken stock. Bring to boil.
  3. Simmer, uncovered, for 20 minutes.
  4. Add cream and seasonings and cook for 5 minutes.
  5. Add cheddar cheese and cook until melted.
  6. Serves 6.

Tips

Make sure all dairy ingredients are well-chilled for best results.
