Tomato Cheddar Soup

A rich and creamy tomato soup featuring melted cheddar cheese and fresh vegetables
Ingredients

- 10 medium Tomatoes
- 2 medium Onions
- 2 stalks Celery
- 1 cup Chicken stock
- 1 cup Heavy cream
- 2 teaspoons Dried basil
- 8 ounces Mild cheddar cheese , shredded
- Salt (to taste)
- Pepper (to taste)
Instructions
- Place tomatoes, onions, and celery in a food processor and coarsely chop
- Pour the vegetable mixture into a large stock pot
- Add chicken stock and bring to a boil
- Reduce heat and simmer, uncovered, for 20 minutes
- Add heavy cream and basil, then cook for 5 more minutes
- Add shredded cheddar cheese and stir until melted and smooth
- Season with salt and pepper to taste
- Serve hot
Tips
For a smoother soup, you can strain the vegetables after simmering or blend with an immersion blender. For extra richness, top each serving with additional shredded cheese or a dollop of sour cream.
