A delicious low-carb, gluten-free pizza crust made with cauliflower

Ingredients

Scale: 1x
  • 1 head Cauliflower , cut into 1-2 inch pieces
  • 0.25 cup Olive oil
  • 2 large Eggs
  • 1 cup Mozzarella cheese , shredded

Instructions

  1. Preheat oven to 350°F
  2. Steam or boil cauliflower pieces until soft, about 20 minutes
  3. Drain thoroughly and mash until smooth
  4. Add olive oil, eggs, and mozzarella cheese, mixing well to combine
  5. Coat a pizza pan with non-stick spray or oil
  6. Spread cauliflower mixture evenly in the pan to form the crust
  7. Bake for 20 minutes until the crust is firm and starting to brown
  8. Add desired pizza toppings and bake for an additional 10-15 minutes

Tips

For a crispier crust, be sure to drain the cooked cauliflower very well - you can even squeeze excess moisture out using a clean kitchen towel after it cools slightly.
