Wheatless Pizza Crust

A delicious low-carb, gluten-free pizza crust made with cauliflower
Ingredients

- 1 head Cauliflower , cut into 1-2 inch pieces
- 0.25 cup Olive oil
- 2 large Eggs
- 1 cup Mozzarella cheese , shredded
Instructions
- Preheat oven to 350°F
- Steam or boil cauliflower pieces until soft, about 20 minutes
- Drain thoroughly and mash until smooth
- Add olive oil, eggs, and mozzarella cheese, mixing well to combine
- Coat a pizza pan with non-stick spray or oil
- Spread cauliflower mixture evenly in the pan to form the crust
- Bake for 20 minutes until the crust is firm and starting to brown
- Add desired pizza toppings and bake for an additional 10-15 minutes
Tips
For a crispier crust, be sure to drain the cooked cauliflower very well - you can even squeeze excess moisture out using a clean kitchen towel after it cools slightly.
