Wild Game Marinade

Serves 8

Ingredients

Scale: 1x
  • 1 cup Merlot wine
  • ½ cup Orange juice
  • 1 tablespoon Black peppercorns
  • 1 teaspoon Marjoram
  • 1 teaspoon Thyme
  • 1 tablespoon Shallot (minced)
  • 3 tablespoon Butter
  • 3 tablespoon Black cherry jam
  • 2 teaspoon A1 Steak Sauce
  • 2 teaspoon Tabasco

Instructions

  1. In a skillet, saute the shallots and then add the remaining marinade.
  2. Bring to boil and reduce to 2/3 cups.
  3. Stir in jam, salt and pepper, tabasco and steak sauce. Cook until jam is dissolved.
  4. Strain and place in small saucepan. Adjust with salt and pepper. You can reduce further if desired.
  5. Remove from heat and add 1 Tablespoon butter.
  6. Serve over game.
  7. To cook the game....
  8. You can pan fry or grill this game. You need a hot fire as it is very lean. Cook the same as a steak.

Tips

Use fresh, ripe fruit for the best flavor.
